  • 1.5 pounds boneless, skinless chicken breasts
  • 1 cup plain whole milk yogurt
  • 2 tablespoons garam masala
  • 1 teaspoon salt
  • 4 cloves garlic, minced
  • 2 tablespoons fresh ginger, minced
  • 4 tablespoons unsalted butter
  • 1 can (14 ounces) crushed tomatoes
  • 1 cup heavy cream
  • 1 teaspoon chili powder (optional)

Instructions

  1. In a large bowl, mix yogurt, garam masala, salt, garlic, and ginger.
  2. Cut chicken into bite-sized pieces and add to the marinade. Cover and refrigerate for at least one hour or overnight.
  3. In a large skillet over medium-high heat, melt 2 tablespoons of butter.
  4. Add marinated chicken (discard excess marinade) and cook until golden brown on all sides, about 5-7 minutes.
  5. Remove cooked chicken from the skillet. Add remaining butter to the skillet; pour in crushed tomatoes and chili powder (if using). Simmer for about ten minutes until slightly thickened.
  6. Stir in heavy cream until well combined. Return cooked chicken to the pan and simmer for an additional five minutes to meld flavors.
  7. Plate your butter chicken and enjoy with fluffy basmati rice or warm naan bread. Garnish with fresh cilantro if desired.
