- 1.5 pounds boneless, skinless chicken breasts
- 1 cup plain whole milk yogurt
- 2 tablespoons garam masala
- 1 teaspoon salt
- 4 cloves garlic, minced
- 2 tablespoons fresh ginger, minced
- 4 tablespoons unsalted butter
- 1 can (14 ounces) crushed tomatoes
- 1 cup heavy cream
- 1 teaspoon chili powder (optional)
Instructions
- In a large bowl, mix yogurt, garam masala, salt, garlic, and ginger.
- Cut chicken into bite-sized pieces and add to the marinade. Cover and refrigerate for at least one hour or overnight.
- In a large skillet over medium-high heat, melt 2 tablespoons of butter.
- Add marinated chicken (discard excess marinade) and cook until golden brown on all sides, about 5-7 minutes.
- Remove cooked chicken from the skillet. Add remaining butter to the skillet; pour in crushed tomatoes and chili powder (if using). Simmer for about ten minutes until slightly thickened.
- Stir in heavy cream until well combined. Return cooked chicken to the pan and simmer for an additional five minutes to meld flavors.
- Plate your butter chicken and enjoy with fluffy basmati rice or warm naan bread. Garnish with fresh cilantro if desired.
