  • 34 boneless skinless chicken breasts
  • 1 cup plain yogurt
  • 4 cloves fresh garlic, minced
  • 1-inch piece ginger, grated
  • 2 tsp cumin
  • 2 tsp coriander
  • 1 tsp turmeric
  • Salt and pepper to taste
  • 1 cup canned tomato puree
  • 1/2 cup heavy cream
  • 4 tbsp butter
  • 1 medium onion, finely chopped

Instructions

  1. In a bowl, combine yogurt, minced garlic, grated ginger, cumin, coriander, turmeric, salt, and pepper.
  2. Cut chicken into cubes and marinate in the mixture for at least an hour (overnight is ideal).
  3. In a large skillet over medium heat, melt butter until bubbling. Add chopped onions and sauté until golden brown (about 5 minutes).
  4. Pour in the canned tomato puree and simmer for about 10 minutes until thickened.
  5. Add the marinated chicken along with any leftover marinade. Cook until chicken is thoroughly cooked (about 15 minutes or internal temperature reaches at least 165°F).
  6. Lower the heat and stir in heavy cream gently. Simmer for another 5 minutes to meld flavors.
  7. Transfer to plates and drizzle with extra cream if desired. Serve with fluffy basmati rice or warm naan.
