- 3–4 boneless skinless chicken breasts
- 1 cup plain yogurt
- 4 cloves fresh garlic, minced
- 1-inch piece ginger, grated
- 2 tsp cumin
- 2 tsp coriander
- 1 tsp turmeric
- Salt and pepper to taste
- 1 cup canned tomato puree
- 1/2 cup heavy cream
- 4 tbsp butter
- 1 medium onion, finely chopped
Instructions
- In a bowl, combine yogurt, minced garlic, grated ginger, cumin, coriander, turmeric, salt, and pepper.
- Cut chicken into cubes and marinate in the mixture for at least an hour (overnight is ideal).
- In a large skillet over medium heat, melt butter until bubbling. Add chopped onions and sauté until golden brown (about 5 minutes).
- Pour in the canned tomato puree and simmer for about 10 minutes until thickened.
- Add the marinated chicken along with any leftover marinade. Cook until chicken is thoroughly cooked (about 15 minutes or internal temperature reaches at least 165°F).
- Lower the heat and stir in heavy cream gently. Simmer for another 5 minutes to meld flavors.
- Transfer to plates and drizzle with extra cream if desired. Serve with fluffy basmati rice or warm naan.
