Ingredients

  • 2 cups water
  • 1 lb ground turkey
  • 2 tbsp vegetable oil
  • 1 cup bell peppers, sliced
  • 1 cup snap peas or carrots, sliced
  • 2 tbsp sesame seeds (for garnish)
  • 1/4 cup teriyaki sauce
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp brown sugar

Instructions

  1. 1. Rinse rice under cold water until the water runs clear.
  2. 2. Combine rice and water in a pot. Bring to a boil, then reduce heat to low and cover. Cook for about 15 minutes or until tender. Fluff with a fork.
  3. 1. In a large skillet over medium heat, add vegetable oil.
  4. 2. Add ground turkey and cook for about 5-7 minutes until browned, breaking it apart with a spatula.
  5. 3. Stir in sliced bell peppers and snap peas/carrots; sauté for an additional 3-4 minutes until vegetables are tender but still vibrant.
  6. 4. Pour in teriyaki sauce, soy sauce, and brown sugar; stir well and simmer for another couple of minutes until sauce thickens slightly.
