  • 1 cup freshly grated Parmesan cheese

  • 1.5 lbs small Yukon Gold or baby potatoes, halved or quartered
  • 2 tbsp olive oil
  • 4 tbsp unsalted butter, melted

Instructions

  1. 1. Preheat Your Oven: Preheat your oven to 400°F (200°C). Prepare a large baking dish with nonstick cooking spray or brush with olive oil.
  2. 2. Prepare the Chicken: Season chicken breasts generously with salt, pepper, and Italian seasoning. Place them in the prepared baking dish.
  3. 3. Chop Those Potatoes: Cut Yukon Gold potatoes into halves or quarters and layer them around the chicken in the baking dish. Drizzle with olive oil.
  4. 4. Make the Flavor Bomb: In a small bowl, combine minced garlic with melted butter and half of the grated Parmesan cheese. Drizzle this mixture over the chicken and potatoes.
  5. 5. Sprinkle More Cheese: Top everything with the remaining Parmesan cheese and an additional pinch of Italian seasoning.
