- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 4 cloves fresh garlic, minced
- 1 cup freshly grated Parmesan cheese
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 1.5 lbs small Yukon Gold or baby potatoes, halved or quartered
- 2 tbsp olive oil
- 4 tbsp unsalted butter, melted
Instructions
- 1. Preheat Your Oven: Preheat your oven to 400°F (200°C). Prepare a large baking dish with nonstick cooking spray or brush with olive oil.
- 2. Prepare the Chicken: Season chicken breasts generously with salt, pepper, and Italian seasoning. Place them in the prepared baking dish.
- 3. Chop Those Potatoes: Cut Yukon Gold potatoes into halves or quarters and layer them around the chicken in the baking dish. Drizzle with olive oil.
- 4. Make the Flavor Bomb: In a small bowl, combine minced garlic with melted butter and half of the grated Parmesan cheese. Drizzle this mixture over the chicken and potatoes.
- 5. Sprinkle More Cheese: Top everything with the remaining Parmesan cheese and an additional pinch of Italian seasoning.
- 6. Bake Away! Bake for 30-35 minutes or until chicken reaches an internal temperature of at least 165°F (75°C) and potatoes are fork-tender. Serve hot, drizzling any remaining sauce from the baking dish over each serving.
