- 4 boneless, skinless chicken breasts
- 4 cloves fresh garlic, minced
- 1 cup grated Parmesan cheese
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp pepper
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1.5 lbs baby potatoes, halved
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp pepper
- Additional minced garlic (from above)
- 4 tbsp unsalted butter
- 2 tbsp fresh lemon juice
Instructions
- Preheat your oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
- In a bowl, drizzle olive oil over chicken breasts. Season with salt, pepper, dried oregano, thyme, minced garlic, and half of the Parmesan cheese. Rub the seasonings into the chicken.
- Prepare the potatoes by tossing halved baby potatoes in olive oil with salt, pepper, and remaining minced garlic. Arrange them around the chicken in the baking dish.
- Bake everything in the preheated oven for about 30–35 minutes or until the chicken reaches an internal temperature of 165°F (75°C) and potatoes are fork-tender.
- While baking, melt butter in a saucepan over medium heat. Stir in lemon juice and any leftover garlic until fragrant (about one minute).
- Once baked, drizzle the sauce over the chicken and potatoes before serving.
