Ingredients

  • 4 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 1 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1.5 lbs baby potatoes, halved
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp pepper
  • Additional minced garlic (from above)
  • 4 tbsp unsalted butter
  • 2 tbsp fresh lemon juice

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
  2. In a bowl, drizzle olive oil over chicken breasts. Season with salt, pepper, dried oregano, thyme, minced garlic, and half of the Parmesan cheese. Rub the seasonings into the chicken.
  3. Prepare the potatoes by tossing halved baby potatoes in olive oil with salt, pepper, and remaining minced garlic. Arrange them around the chicken in the baking dish.
  4. Bake everything in the preheated oven for about 30–35 minutes or until the chicken reaches an internal temperature of 165°F (75°C) and potatoes are fork-tender.
  5. While baking, melt butter in a saucepan over medium heat. Stir in lemon juice and any leftover garlic until fragrant (about one minute).
  6. Once baked, drizzle the sauce over the chicken and potatoes before serving.
