Description

Garlic Parmesan Chicken and Potatoes is a comforting dish featuring tender chicken and crispy potatoes enveloped in a rich garlic and cheese sauce. Perfect for weeknight dinners or special gatherings!


Ingredients

  • 34 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 1 cup grated Parmesan cheese
  • 1.5 lbs Yukon Gold or red potatoes, cut into bite-sized chunks
  • 2 tbsp olive oil
  • 2 tsp Italian seasoning
  • Salt and pepper to taste
  • 4 tbsp unsalted butter, melted

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
  2. In a large bowl, combine the potato chunks with olive oil, salt, pepper, and half of the minced garlic. Toss until well-coated.
  3. In another bowl, mix the remaining garlic, Italian seasoning, salt, pepper, and half of the Parmesan cheese. Rub this mixture all over the chicken breasts.
  4. Arrange the seasoned chicken breasts in the prepared baking dish alongside the potato mixture. Drizzle melted butter over everything.
  5. Bake in the preheated oven for about 25-30 minutes or until the chicken reaches an internal temperature of 165°F (74°C) and potatoes are fork-tender.
  6. During the last five minutes of baking, sprinkle the remaining Parmesan cheese on top to melt.
  7. Serve hot and drizzle with any leftover buttery goodness from the pan.
