- 3–4 boneless, skinless chicken breasts
- 4 cloves fresh garlic, minced
- 1 cup grated Parmesan cheese
- 1.5 lbs Yukon Gold or red potatoes, cut into bite-sized chunks
- 2 tbsp olive oil
- 2 tsp Italian seasoning
- Salt and pepper to taste
- 4 tbsp unsalted butter, melted
Instructions
- Preheat your oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
- In a large bowl, combine the potato chunks with olive oil, salt, pepper, and half of the minced garlic. Toss until well-coated.
- In another bowl, mix the remaining garlic, Italian seasoning, salt, pepper, and half of the Parmesan cheese. Rub this mixture all over the chicken breasts.
- Arrange the seasoned chicken breasts in the prepared baking dish alongside the potato mixture. Drizzle melted butter over everything.
- Bake in the preheated oven for about 25-30 minutes or until the chicken reaches an internal temperature of 165°F (74°C) and potatoes are fork-tender.
- During the last five minutes of baking, sprinkle the remaining Parmesan cheese on top to melt.
- Serve hot and drizzle with any leftover buttery goodness from the pan.
