- 1 can (14.5 oz) diced tomatoes
- 8 oz cream cheese
- 1 cup shredded cheddar cheese or Mexican blend cheese
- Sour cream (to taste)
- Fresh cilantro (for garnish)
Instructions
- 1. Brown the Meat: In a skillet over medium heat, brown the ground beef or turkey until fully cooked. Drain excess fat and transfer to the slow cooker.
- 2. Mix in Seasoning: Add taco seasoning and diced tomatoes (including juices) to the meat. Stir well to combine.
- 3. Add Cream Cheese: Cube the cream cheese and mix it into the meat and tomato mixture until evenly distributed.
- 4. Toss in Pasta: Add uncooked pasta to the slow cooker, then pour in enough water (or broth) to cover everything by about an inch.
- 5. Cook Low and Slow: Cover and cook on low for about 4 hours or high for about 2 hours, without peeking too often.
- 6. Serve It Up: Once cooking time is complete, stir well, sprinkle shredded cheese on top, and let it melt slightly before serving. Top with sour cream and fresh cilantro.
