- 1 medium head cauliflower, cut into florets
- 2 tsp cumin seeds
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup crumbled feta cheese
- 2 tbsp lemon juice (freshly squeezed)
- 2 tbsp olive oil (plus more for drizzling)
- Fresh parsley, chopped
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, toss cauliflower florets with olive oil, toasted cumin seeds, salt, and black pepper until well-coated.
- Spread the seasoned cauliflower in a single layer on a baking sheet.
- Roast for about 25-30 minutes or until golden brown and crispy on the edges, flipping halfway through.
- In a food processor, combine crumbled feta cheese, lemon juice, and olive oil.
- Blend until smooth and creamy. If needed, add water one tablespoon at a time for desired consistency.
- Arrange roasted cauliflower on a serving platter and dollop generous amounts of whipped feta over it.
- Garnish with chopped parsley and drizzle with additional olive oil if desired.
- Enjoy warm as an appetizer or side dish!
