Ingredients

  • 1 medium head cauliflower, cut into florets
  • 2 tsp cumin seeds
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup crumbled feta cheese
  • 2 tbsp lemon juice (freshly squeezed)
  • 2 tbsp olive oil (plus more for drizzling)
  • Fresh parsley, chopped

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, toss cauliflower florets with olive oil, toasted cumin seeds, salt, and black pepper until well-coated.
  3. Spread the seasoned cauliflower in a single layer on a baking sheet.
  4. Roast for about 25-30 minutes or until golden brown and crispy on the edges, flipping halfway through.
  5. In a food processor, combine crumbled feta cheese, lemon juice, and olive oil.
  6. Blend until smooth and creamy. If needed, add water one tablespoon at a time for desired consistency.
  7. Arrange roasted cauliflower on a serving platter and dollop generous amounts of whipped feta over it.
  8. Garnish with chopped parsley and drizzle with additional olive oil if desired.
  9. Enjoy warm as an appetizer or side dish!
