Ingredients

  • 4 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 1 cup grated Parmesan cheese
  • 1 cup panko breadcrumbs
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • 1 cup low-sodium chicken broth
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 400°F (200°C) and prepare a baking dish with nonstick cooking spray.
  2. Place chicken breasts between plastic wrap and pound them to an even thickness (about 1/2 inch). Season with salt and pepper.
  3. In one bowl, mix grated Parmesan cheese with panko breadcrumbs. In another bowl, whisk together heavy cream and minced garlic.
  4. Dip each chicken breast into the cream mixture, then coat thoroughly in the breadcrumb mixture.
  5. Arrange coated chicken in the baking dish and drizzle lightly with olive oil. Bake for 25-30 minutes until golden brown and cooked through (internal temperature of 165°F).
  6. While chicken bakes, heat olive oil in a skillet over medium heat.
  7. Sauté minced garlic until fragrant (about 1 minute).
  8. Add chicken broth and heavy cream; stir well and let simmer until slightly thickened (about 5 minutes).
