Description

Creamy Mushroom and Asparagus Chicken Penne is a delightful, comforting dish that combines tender chicken, fresh vegetables, and rich creamy pasta for a satisfying dining experience.

Ingredients

Scale
  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 12 oz penne pasta (whole wheat or regular)
  • 1 bunch fresh asparagus (about 1 lb)
  • 8 oz button mushrooms (sliced)
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 1 cup grated Parmesan cheese
  • 3 cloves garlic (minced)
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare the Chicken: Cut chicken breasts into bite-sized pieces.
  2. Cook the Pasta: In a large pot of salted boiling water, cook penne pasta according to package instructions until al dente. Reserve about one cup of pasta water before draining.
  3. Sauté Chicken: In a large skillet over medium heat, warm olive oil. Add chopped chicken, season with salt and pepper, and cook until golden brown (about five minutes).
  4. Add Vegetables: Stir in sliced mushrooms and asparagus to the skillet with chicken. Sauté until tender (approximately five more minutes).
  5. Create the Sauce: Pour in chicken broth and heavy cream while scraping any browned bits from the bottom of the pan. Let simmer gently until slightly thickened (about three minutes).
  6. Combine Everything: Add cooked penne and Parmesan cheese to the skillet, mixing well. Use reserved pasta water as needed to achieve a creamy consistency.
  7. Serve: Transfer onto plates and drizzle with any remaining sauce for a finishing touch.
