- 4 cups fresh baby spinach
- 1 cup crumbled feta cheese
- 1 cup heavy cream
- 3 cloves garlic, minced
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Sauté the Garlic: Heat a large skillet over medium heat. Add olive oil and once hot, toss in minced garlic. Sauté for about 1-2 minutes until fragrant but not browned.
- Add Spinach: Add fresh spinach to the skillet. Sauté until wilted, about 3-4 minutes.
- Stir in Cream: Pour in heavy cream and let it simmer gently while stirring frequently for about 5 minutes until it thickens slightly.
- Combine Gnocchi: Cook gnocchi according to package instructions until they float. Drain well before gently folding them into the creamy spinach sauce.
- Add Feta: Sprinkle crumbled feta over the mixture and stir gently until well combined and heated through.
