  • 1 can (13.5 oz) full-fat coconut milk
  • 1 cup fresh pineapple chunks
  • 2 tablespoons brown sugar
  • Pinch of salt
  • Chopped cilantro (optional, for garnish)

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan, combine 1 cup of rinsed rice, 1 can of coconut milk, and ½ cup of water. Add a pinch of salt. Bring to a gentle boil over medium heat.
  3. Once boiling, reduce heat to low and cover the pan with a lid. Let it simmer for approximately 15 minutes or until all liquid has been absorbed.
  4. Remove from heat and fluff the rice with a fork. Gently fold in 1 cup of fresh pineapple chunks and 2 tablespoons of brown sugar until combined.
  5. Cover again and let sit for an additional 5 minutes to allow flavors to meld.
