- 3–4 boneless, skinless chicken breasts
- 2 tablespoons Cajun seasoning
- 8 ounces fettuccine or penne pasta
- 1 cup heavy cream
- 1 cup low-sodium chicken broth
- 2 cloves fresh garlic, minced
- 1/2 cup freshly grated Parmesan cheese
Instructions
- Season chicken breasts liberally with Cajun seasoning.
- In a large skillet over medium heat, add 2 tablespoons olive oil. Once hot, cook chicken for about 5-7 minutes on each side until golden brown and cooked through. Remove from skillet and let rest.
- Bring a large pot of salted water to a boil. Add pasta and cook according to package directions until al dente. Drain and set aside.
- In the same skillet, add minced garlic and sauté until fragrant (about one minute).
- Pour in chicken broth and heavy cream while scraping up brown bits from the pan; stir well to combine.
- Slice rested chicken into strips and return it to the skillet along with cooked pasta. Toss everything together until evenly coated in sauce.
- Serve immediately with a sprinkle of Parmesan cheese on top.
