  • 34 boneless, skinless chicken breasts
  • 2 tablespoons Cajun seasoning
  • 8 ounces fettuccine or penne pasta
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 2 cloves fresh garlic, minced
  • 1/2 cup freshly grated Parmesan cheese

Instructions

  1. Season chicken breasts liberally with Cajun seasoning.
  2. In a large skillet over medium heat, add 2 tablespoons olive oil. Once hot, cook chicken for about 5-7 minutes on each side until golden brown and cooked through. Remove from skillet and let rest.
  3. Bring a large pot of salted water to a boil. Add pasta and cook according to package directions until al dente. Drain and set aside.
  4. In the same skillet, add minced garlic and sauté until fragrant (about one minute).
  5. Pour in chicken broth and heavy cream while scraping up brown bits from the pan; stir well to combine.
  6. Slice rested chicken into strips and return it to the skillet along with cooked pasta. Toss everything together until evenly coated in sauce.
  7. Serve immediately with a sprinkle of Parmesan cheese on top.
