- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 2 eggs, room temperature
- 1 cup dried cranberries
- 1/2 cup white chocolate chips
- 8 oz cream cheese, softened
- 1 cup powdered sugar
Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8 inch baking dish with parchment paper.
- In a large mixing bowl, beat together unsalted butter, granulated sugar, and brown sugar until fluffy.
- Add eggs one at a time, mixing well after each addition.
- Gradually mix in all-purpose flour until just combined.
- Fold in dried cranberries and white chocolate chips. Spread the mixture evenly into the prepared baking dish.
- Bake for 20-25 minutes or until golden brown on top. A toothpick inserted should come out clean but moist. Let cool completely.
- While waiting for the bars to cool, beat together softened cream cheese and powdered sugar until smooth.
- Once the bars are cooled, spread the frosting evenly over the top.
