Description

Indulge in a tropical getaway with this easy coconut French toast, featuring fluffy bread soaked in creamy coconut milk, topped with fresh fruit, and drizzled with maple syrup.

Ingredients

Scale
  • 4 large eggs
  • 1 cup full-fat coconut milk
  • 2 tsp vanilla extract
  • 1 tsp ground cinnamon
  • Pinch of salt
  • 6 slices thick brioche or challah bread
  • 1 cup fresh fruit (bananas, mangoes, or berries)
  • 1/2 cup shredded coconut (toasted)
  • Maple syrup for drizzling

Instructions

  1. In a large mixing bowl, whisk together eggs, coconut milk, vanilla extract, ground cinnamon, and a pinch of salt until smooth.
  2. Dip each slice of bread into the coconut mixture one at a time, ensuring both sides are coated but not overly soggy.
  3. Heat a nonstick skillet over medium heat and add a pat of butter or coconut oil until melted.
  4. Place soaked bread slices onto the skillet. Cook for about 3-4 minutes on each side until golden brown and crispy.
  5. Transfer cooked slices to plates. Top with fresh fruit, sprinkle with toasted shredded coconut, and drizzle with maple syrup.
