Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, cream together softened butter and sugar until light and fluffy.
- Gradually add flour and salt, mixing until you achieve a crumbly dough that holds together when pressed.
- Press about two-thirds of the dough into a greased tart pan, covering the bottom and sides evenly.
- Bake for 15 minutes or until lightly golden brown. Remove from oven and let cool slightly.
- In another bowl, mix pitted cherries with sugar and vanilla extract until well combined.
- Let the mixture sit for about ten minutes to develop syrupy juices.
- Pour the cherry mixture into your prepared crust, spreading it evenly.
- Crumble the remaining dough over the top of the cherries.
- Return to the oven and bake for an additional 25-30 minutes or until bubbly and golden brown on top.
