Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1/4 tsp salt
  • 2 cups fresh cherries, pitted and chopped
  • 1/4 cup granulated sugar
  • 1 tsp pure vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together softened butter and sugar until light and fluffy.
  3. Gradually add flour and salt, mixing until you achieve a crumbly dough that holds together when pressed.
  4. Press about two-thirds of the dough into a greased tart pan, covering the bottom and sides evenly.
  5. Bake for 15 minutes or until lightly golden brown. Remove from oven and let cool slightly.
  6. In another bowl, mix pitted cherries with sugar and vanilla extract until well combined.
  7. Let the mixture sit for about ten minutes to develop syrupy juices.
  8. Pour the cherry mixture into your prepared crust, spreading it evenly.
  9. Crumble the remaining dough over the top of the cherries.
  10. Return to the oven and bake for an additional 25-30 minutes or until bubbly and golden brown on top.
