Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 2 cups fresh cherries, pitted and chopped
  • 1/4 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/2 cup rolled oats
  • 1/4 cup brown sugar
  • 1/4 cup all-purpose flour
  • 1/4 cup unsalted butter, cold and cubed

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper.
  2. In a mixing bowl, combine flour and granulated sugar. Cut in cold butter until the mixture resembles coarse crumbs.
  3. Press the mixture evenly into the bottom of the prepared baking dish.
  4. In a medium bowl, mix chopped cherries with granulated sugar and vanilla extract until well combined.
  5. Spread cherry filling evenly over the crust.
  6. In a separate bowl, combine rolled oats, brown sugar, flour, and cold butter. Mix until crumbly.
  7. Sprinkle topping over cherry filling evenly.
  8. Bake in preheated oven for 30-35 minutes or until golden brown on top and bubbly around the edges.
  9. Allow to cool slightly before slicing into bars.
