- 1 large egg, at room temperature
- 1 tsp chai spice blend (cinnamon, ginger, cardamom, cloves, nutmeg)
- 1/2 cup semi-sweet chocolate chips
- 1/2 tsp baking soda
- 1/4 tsp salt
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy (about three minutes).
- Beat in one egg until smooth and well combined.
- In another bowl, whisk together the flour, oats, baking soda, chai spice blend, and salt.
- Gradually mix the dry ingredients into the wet mixture until just combined. Fold in the chocolate chips.
- Drop rounded tablespoons of dough onto prepared baking sheets about two inches apart. Bake for 10-12 minutes or until edges are golden brown but centers remain soft.
- Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
