- 1 cup whole milk (or milk alternative)
- 2 large eggs
- 1/4 cup melted butter
Instructions
- Preheat your oven to 400°F (200°C), placing your cast iron skillet inside to heat up.
- In a large bowl, whisk together cornmeal, flour, baking powder, sugar, and salt until well combined.
- In another bowl, whisk together milk, eggs, and melted butter until smooth. Pour into dry ingredients and stir gently until just combined.
- Carefully remove the hot skillet from the oven. Pour in the batter and listen for that satisfying sizzle.
- Bake for 20-25 minutes or until golden brown on top and a toothpick inserted in the center comes out clean.
- Allow to cool for about five minutes before slicing into wedges. Enjoy warm with honey butter or alongside your favorite chili.
