Ingredients

  • 34 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • Salt and pepper to taste
  • Oil for frying
  • 1/2 cup mayonnaise
  • 3 tbsp sriracha sauce (adjust to taste)
  • 2 tbsp honey
  • 1 tbsp lemon juice
  • Fresh burger buns
  • Lettuce leaves
  • Sliced tomatoes

Instructions

  1. Pound chicken breasts to about half an inch thick. Season with salt and pepper.
  2. Set up a breading station with three shallow dishes: one for flour, one for beaten eggs, and one for panko breadcrumbs mixed with salt and pepper.
  3. Dredge each chicken breast in flour, dip in egg wash, then coat with panko breadcrumbs.
  4. Heat oil in a skillet over medium heat (about 350°F). Fry each chicken breast for about five minutes on each side until golden brown. Drain on paper towels.
  5. In a bowl, mix together mayonnaise, sriracha sauce, honey, and lemon juice until smooth.
  6. Spread bang bang sauce generously on burger buns.
  7. Place crispy chicken on top and add lettuce and sliced tomatoes.
  8. Drizzle any leftover sauce over the sandwich before serving.
