Description

Almond Cherry Muffins are a delightful treat, bursting with juicy cherries and a hint of almond flavor. Perfect for breakfast or a snack, they are easy to make and deliciously satisfying.

Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • ¾ cup granulated sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 tsp almond extract
  • ⅓ cup milk
  • 2 large eggs
  • 1 cup fresh cherries, pitted and chopped
  • ¼ cup sliced almonds (for topping)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a muffin tin or line with muffin liners.
  2. In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt.
  3. In another bowl, mix the milk, eggs, and almond extract until well combined.
  4. Pour the wet mixture into the dry ingredients and gently fold until just combined—avoid overmixing.
  5. Fold in the chopped cherries until evenly distributed throughout the batter.
  6. Scoop the batter into the prepared muffin tin, filling each cup about two-thirds full. Top each muffin with sliced almonds.
  7. Bake in the preheated oven for 20-25 minutes or until golden brown and a toothpick inserted into the center comes out clean.
  8. Let cool slightly before enjoying these muffins warm.
