Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter
  • 1/3 cup cocoa powder
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp peppermint extract
  • 1/2 cup all-purpose flour
  • 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Gradually add the flour and mix until combined.
  4. Press the mixture evenly into the bottom of the prepared pan.
  5. Bake for about 15-20 minutes until lightly golden.
  6. In a saucepan over medium heat, melt together the butter and cocoa powder until smooth.
  7. Remove from heat and stir in granulated sugar, then add eggs one at a time, mixing well after each addition.
  8. Mix in peppermint extract and fold in flour until just combined. Add chocolate chips.
  9. Pour brownie batter over cooled shortbread layer and smooth with a spatula.
  10. Bake for another 25-30 minutes or until a toothpick comes out mostly clean.
  11. Allow to cool completely before slicing into squares.
