- 1/2 cup granulated sugar

- 1/2 cup unsalted butter
- 1/3 cup cocoa powder

- 1 tsp peppermint extract
- 1/2 cup all-purpose flour
- 1/2 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
- In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Gradually add the flour and mix until combined.
- Press the mixture evenly into the bottom of the prepared pan.
- Bake for about 15-20 minutes until lightly golden.
- In a saucepan over medium heat, melt together the butter and cocoa powder until smooth.
- Remove from heat and stir in granulated sugar, then add eggs one at a time, mixing well after each addition.
- Mix in peppermint extract and fold in flour until just combined. Add chocolate chips.
- Pour brownie batter over cooled shortbread layer and smooth with a spatula.
- Bake for another 25-30 minutes or until a toothpick comes out mostly clean.
- Allow to cool completely before slicing into squares.
