  • 1/3 cup cocoa powder
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 tsp peppermint extract

  • 1/4 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 tsp peppermint extract
  • 1/2 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×9 inch baking dish with parchment paper.
  2. In a large mixing bowl, cream together softened butter, granulated sugar, brown sugar, and cocoa powder until fluffy.
  3. Add eggs one at a time, mixing well after each addition. Gently fold in flour until just combined.
  4. Pour brownie batter into the prepared baking dish and spread evenly. Bake for about 20-25 minutes or until a toothpick inserted comes out clean.
  5. While brownies bake, mix softened butter and sugar in another bowl until creamy. Add flour and mix until crumbly; stir in peppermint extract.
  6. Once the brownie layer is slightly cooled, spread the shortbread mixture over it.
  7. Return the pan to the oven and bake for another 15-20 minutes until golden brown on top.
  8. Remove from oven and let cool completely before melting chocolate chips and drizzling over the top.
