Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tbsp baking powder
  • 1 tsp ground cinnamon
  • 1 tsp ground nutmeg
  • 1 cup eggnog (store-bought or homemade)
  • 1/2 cup vegetable oil
  • 2 cups whipped topping
  • Additional cinnamon or nutmeg for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan with nonstick cooking spray.
  2. In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and nutmeg.
  3. In another bowl, mix eggnog and vegetable oil until well combined. Add to the dry mixture and stir gently until just combined.
  4. Pour the batter into the prepared pan and bake for about 25-30 minutes or until a toothpick inserted comes out clean.
  5. Once baked, let cool slightly and use the handle of a wooden spoon to poke holes all over the top of the cake.
  6. Warm up an additional cup of eggnog and pour it over the hot cake so it seeps into the holes. Allow it to chill completely before frosting.
  7. Once cooled, spread whipped topping evenly across the top of the cake.
  8. Sprinkle some extra cinnamon or nutmeg on top before serving.
