- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tbsp baking powder
- 1 tsp ground cinnamon
- 1 tsp ground nutmeg
- 1 cup eggnog (store-bought or homemade)
- 1/2 cup vegetable oil
- 2 cups whipped topping
- Additional cinnamon or nutmeg for garnish
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan with nonstick cooking spray.
- In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and nutmeg.
- In another bowl, mix eggnog and vegetable oil until well combined. Add to the dry mixture and stir gently until just combined.
- Pour the batter into the prepared pan and bake for about 25-30 minutes or until a toothpick inserted comes out clean.
- Once baked, let cool slightly and use the handle of a wooden spoon to poke holes all over the top of the cake.
- Warm up an additional cup of eggnog and pour it over the hot cake so it seeps into the holes. Allow it to chill completely before frosting.
- Once cooled, spread whipped topping evenly across the top of the cake.
- Sprinkle some extra cinnamon or nutmeg on top before serving.
