Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two round cake pans.
- In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, and salt until well combined.
- In another bowl, mix eggs, buttermilk, vegetable oil, and vanilla extract until smooth. Pour this mixture into the dry ingredients and stir gently until just combined.
- Divide the batter evenly between prepared pans. Bake for about 30-35 minutes or until a toothpick inserted comes out clean. Let cool in pans for ten minutes before transferring to wire racks.
- While cakes cool, beat together softened butter and peanut butter in a bowl until fluffy. Gradually add powdered sugar followed by heavy cream until you reach a spreadable consistency.
- Once cooled completely, place one cake layer on a serving plate. Spread a generous layer of frosting on top before adding the second layer. Top with remaining frosting.
