- 3–4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 2 tbsp olive oil
- 12 oz rigatoni pasta
- 4 cloves fresh garlic, minced
- 1 cup heavy cream
- 1/2 cup low-sodium soy sauce
- 1 cup freshly grated Parmesan cheese
Instructions
- Season chicken breasts with salt and pepper.
- In a large skillet over medium heat, add olive oil and cook chicken until golden brown and cooked through (about 6-7 minutes per side). Remove from skillet and let rest.
- In a large pot of salted boiling water, cook rigatoni according to package instructions until al dente. Drain and set aside.
- In the same skillet used for the chicken, add minced garlic and sauté until fragrant (about one minute).
- Stir in heavy cream and soy sauce; mix well.
- Lower heat and add freshly grated Parmesan cheese, stirring until melted and creamy.
- Slice cooked chicken and toss it with rigatoni.
- Pour the sauce over pasta and chicken; mix well to coat every piece.
