Ingredients

  • 1 lb sirloin or ribeye steak
  • 4 cloves fresh garlic, minced
  • 4 tbsp unsalted butter
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 lb baby or Yukon Gold potatoes
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • Fresh parsley, chopped

Instructions

  1. Cube the steak into bite-sized pieces and season with salt, pepper, and paprika.
  2. In a large skillet over medium-high heat, melt half of the butter.
  3. Add seasoned steak bites in batches to avoid overcrowding; sear each side until golden brown (about two minutes per side).
  4. Reduce heat to medium-low and add minced garlic and remaining butter. Stir until garlic is fragrant and steak bites are well-coated.
  5. Preheat your oven to 425°F (220°C).
  6. Wash and quarter the potatoes. Toss them in olive oil, salt, and pepper.
  7. Spread on a baking sheet in an even layer and roast for about 25 minutes or until golden brown and crispy.
  8. Once both components are cooked, toss the crispy potatoes into the skillet with steak bites.
  9. Stir gently to combine so each piece is coated in garlic butter sauce.
  10. Garnish with freshly chopped parsley before serving.
