- 1 lb sirloin or ribeye steak
- 4 cloves fresh garlic, minced
- 4 tbsp unsalted butter
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika
- 1 lb baby or Yukon Gold potatoes
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp black pepper
- Fresh parsley, chopped
Instructions
- Cube the steak into bite-sized pieces and season with salt, pepper, and paprika.
- In a large skillet over medium-high heat, melt half of the butter.
- Add seasoned steak bites in batches to avoid overcrowding; sear each side until golden brown (about two minutes per side).
- Reduce heat to medium-low and add minced garlic and remaining butter. Stir until garlic is fragrant and steak bites are well-coated.
- Preheat your oven to 425°F (220°C).
- Wash and quarter the potatoes. Toss them in olive oil, salt, and pepper.
- Spread on a baking sheet in an even layer and roast for about 25 minutes or until golden brown and crispy.
- Once both components are cooked, toss the crispy potatoes into the skillet with steak bites.
- Stir gently to combine so each piece is coated in garlic butter sauce.
- Garnish with freshly chopped parsley before serving.
