- 2 salmon fillets (6–8 ounces each)
- 2 tbsp olive oil
- 3 tbsp freshly squeezed lemon juice
- 2 tbsp fresh dill, chopped
- Salt and pepper to taste
- 4 cups mixed greens (arugula and spinach)
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1 tbsp Dijon mustard
- 1 tbsp honey
- 2 tbsp olive oil
- Remaining lemon juice from salmon marinade
Instructions
- In a bowl, whisk together olive oil, lemon juice, fresh dill, salt, and pepper.
- Place salmon fillets in the marinade and let soak for at least 30 minutes.
- Preheat grill to medium-high heat or oven to 400°F (200°C).
- Grill skin-side down for about six minutes per side or bake for 12-15 minutes until flaky.
- In a large bowl, combine mixed greens, cherry tomatoes, and cucumber.
- In another bowl, whisk together Dijon mustard, honey, olive oil, and remaining lemon juice.
- Drizzle dressing over the salad just before serving.
