Ingredients

  • 2 salmon fillets (68 ounces each)
  • 2 tbsp olive oil
  • 3 tbsp freshly squeezed lemon juice
  • 2 tbsp fresh dill, chopped
  • Salt and pepper to taste
  • 4 cups mixed greens (arugula and spinach)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1 tbsp Dijon mustard
  • 1 tbsp honey
  • 2 tbsp olive oil
  • Remaining lemon juice from salmon marinade

Instructions

  1. In a bowl, whisk together olive oil, lemon juice, fresh dill, salt, and pepper.
  2. Place salmon fillets in the marinade and let soak for at least 30 minutes.
  3. Preheat grill to medium-high heat or oven to 400°F (200°C).
  4. Grill skin-side down for about six minutes per side or bake for 12-15 minutes until flaky.
  5. In a large bowl, combine mixed greens, cherry tomatoes, and cucumber.
  6. In another bowl, whisk together Dijon mustard, honey, olive oil, and remaining lemon juice.
  7. Drizzle dressing over the salad just before serving.
