  • 1 cup stone-ground grits
  • 4 cups water or chicken broth
  • 4 tbsp unsalted butter (for grits)
  • 1/2 cup heavy cream

Instructions

  1. For the Grits: Bring water or chicken broth to a boil in a medium saucepan.
  2. Gradually whisk in stone-ground grits, stirring frequently.
  3. Reduce heat to low and simmer, stirring occasionally until thickened, about 20-25 minutes.
  4. For the Shrimp: In a skillet over medium-high heat, melt two tablespoons of butter.
  5. Add minced garlic and sauté until fragrant, about one minute.
  6. Toss in shrimp and sprinkle with Cajun seasoning; cook until pink and opaque—about three minutes on each side.
  7. Remove shrimp from skillet but keep warm.
  8. For the Sauce: In the same skillet, add remaining butter and lemon juice over medium heat.
  9. Stir well before adding heavy cream; bring it just to a simmer while scraping up any bits stuck on the bottom.
  10. To Combine: Return shrimp to the skillet with sauce along with chopped green onions.
  11. Mix gently until well-coated; cook together for another minute.
  12. To Serve: Spoon creamy grits onto plates as your base layer.
  13. Top generously with flavorful shrimp mixture.
