Instructions
- For the Grits: Bring water or chicken broth to a boil in a medium saucepan.
- Gradually whisk in stone-ground grits, stirring frequently.
- Reduce heat to low and simmer, stirring occasionally until thickened, about 20-25 minutes.
- For the Shrimp: In a skillet over medium-high heat, melt two tablespoons of butter.
- Add minced garlic and sauté until fragrant, about one minute.
- Toss in shrimp and sprinkle with Cajun seasoning; cook until pink and opaque—about three minutes on each side.
- Remove shrimp from skillet but keep warm.
- For the Sauce: In the same skillet, add remaining butter and lemon juice over medium heat.
- Stir well before adding heavy cream; bring it just to a simmer while scraping up any bits stuck on the bottom.
- To Combine: Return shrimp to the skillet with sauce along with chopped green onions.
- Mix gently until well-coated; cook together for another minute.
- To Serve: Spoon creamy grits onto plates as your base layer.
