Ingredients

  • 1 cup stone-ground grits
  • 4 cups water or chicken broth
  • 2 tbsp unsalted butter
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • 1 lb fresh or frozen shrimp, peeled and deveined
  • 3 tbsp Cajun seasoning
  • 2 tbsp unsalted butter
  • 3 cloves garlic, minced
  • Juice of 1 lemon
  • 2 green onions, chopped

Instructions

  1. In a saucepan, bring water or chicken broth to a boil.
  2. Gradually whisk in stone-ground grits and reduce heat to low.
  3. Cook for about 20-25 minutes, stirring occasionally until thickened.
  4. Stir in butter, heavy cream, salt, and pepper to taste.
  5. In a skillet, melt half of the butter over medium heat.
  6. Add minced garlic and shrimp seasoned with Cajun seasoning.
  7. Cook until shrimp turns pink (about 3-5 minutes). Remove from heat.
  8. Stir in lemon juice and chopped green onions.
  9. Combine sautéed shrimp mixture with cooked grits over low heat until heated through.
  10. Serve creamy grits in bowls topped with the flavorful shrimp mixture and garnish with extra green onions.
