Ingredients

  • 1 cup pineapple chunks (fresh or drained canned)

  • Zest of 1 orange

Instructions

  1. Rinse the cranberries under cold water, discarding any mushy ones. If using fresh pineapple, cut it into one-inch chunks.
  2. In a medium saucepan over medium heat, combine cranberries, pineapple chunks, sugar, and orange zest. Stir gently until the mixture heats up and cranberries begin to pop.
  3. Let the mixture simmer for about 10-15 minutes until it thickens slightly. Enjoy the aromatic scent as it cooks.
  4. Remove from heat and allow to cool for about 30 minutes. The relish will continue to thicken as it cools.
