Ingredients

  • 1 lb ground beef (80/20)
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, rinsed
  • 1 can (15 oz) black beans, rinsed
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp chili powder
  • Salt and pepper to taste
  • Sour cream, to taste
  • Shredded cheese (cheddar or Monterey Jack), to taste

Instructions

  1. In a large pot over medium heat, add ground beef and cook until browned. Break it apart with a spatula for even cooking.
  2. Add chopped onions to the pot and sauté until translucent (about five minutes). Stir in minced garlic and cook until fragrant.
  3. Pour in canned tomatoes (juice included) and drained beans. Mix well to combine all ingredients.
  4. Sprinkle in chili powder along with salt and pepper to taste. Stir thoroughly to ensure spices coat every ingredient.
  5. Bring the mixture to a gentle boil, then reduce heat to low. Let simmer uncovered for about thirty minutes, stirring occasionally.
  6. Once thickened, ladle into bowls and top with sour cream and shredded cheese.
