- 1 lb ground beef (80/20)
- 1 can (14.5 oz) diced tomatoes
- 1 can (15 oz) kidney beans, rinsed
- 1 can (15 oz) black beans, rinsed
- 1 medium yellow onion, chopped
- 3 cloves garlic, minced
- 2 tbsp chili powder
- Salt and pepper to taste
- Sour cream, to taste
- Shredded cheese (cheddar or Monterey Jack), to taste
Instructions
- In a large pot over medium heat, add ground beef and cook until browned. Break it apart with a spatula for even cooking.
- Add chopped onions to the pot and sauté until translucent (about five minutes). Stir in minced garlic and cook until fragrant.
- Pour in canned tomatoes (juice included) and drained beans. Mix well to combine all ingredients.
- Sprinkle in chili powder along with salt and pepper to taste. Stir thoroughly to ensure spices coat every ingredient.
- Bring the mixture to a gentle boil, then reduce heat to low. Let simmer uncovered for about thirty minutes, stirring occasionally.
- Once thickened, ladle into bowls and top with sour cream and shredded cheese.
