- 4 large bell peppers (any color)
- 1 lb ground turkey
- 2 cups fresh spinach, chopped
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup shredded mozzarella or cheddar cheese
Instructions
- Preheat your oven to 375°F (190°C) and lightly spray a baking dish with nonstick cooking spray.
- Cut the tops off the bell peppers and remove the seeds. Place them upright in the baking dish.
- In a skillet over medium heat, add olive oil and sauté the chopped onion until translucent, about 5 minutes.
- Add minced garlic and cook for another minute until fragrant.
- Stir in ground turkey, cooking until browned. Then mix in chopped spinach until wilted.
- Season with Italian seasoning, salt, and pepper.
- Stuff each pepper generously with the turkey filling and top with shredded cheese.
- Cover the dish with aluminum foil and bake for about 25 minutes. Remove foil and bake for an additional 10 minutes until cheese is bubbly.
- Let cool slightly before serving, optionally garnishing with fresh herbs.
