Ingredients

  • 4 large bell peppers (any color)
  • 1 lb ground turkey
  • 2 cups fresh spinach, chopped
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded mozzarella or cheddar cheese

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly spray a baking dish with nonstick cooking spray.
  2. Cut the tops off the bell peppers and remove the seeds. Place them upright in the baking dish.
  3. In a skillet over medium heat, add olive oil and sauté the chopped onion until translucent, about 5 minutes.
  4. Add minced garlic and cook for another minute until fragrant.
  5. Stir in ground turkey, cooking until browned. Then mix in chopped spinach until wilted.
  6. Season with Italian seasoning, salt, and pepper.
  7. Stuff each pepper generously with the turkey filling and top with shredded cheese.
  8. Cover the dish with aluminum foil and bake for about 25 minutes. Remove foil and bake for an additional 10 minutes until cheese is bubbly.
  9. Let cool slightly before serving, optionally garnishing with fresh herbs.
