- 3 large eggs
- 1 cup buttermilk (or milk + 1 tbsp vinegar)
- 2 tsp vanilla extract
- 1 cup creamy or crunchy peanut butter
- 2 cups powdered sugar
- 1/2 cup softened unsalted butter
- 3 tbsp milk (adjust for consistency)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two round cake pans.
- In a large mixing bowl, whisk together the flour, cocoa powder, baking powder, salt, and sugar until well combined.
- In another bowl, mix the vegetable oil, eggs, buttermilk, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined. Divide the batter evenly between prepared pans.
- Bake for about 25-30 minutes or until a toothpick inserted comes out clean. Allow cakes to cool in pans for ten minutes before transferring to wire racks.
- Once cakes are completely cool, prepare the frosting by beating together peanut butter, softened butter, powdered sugar, and milk until fluffy.
- Spread frosting between the layers and on top of the cake.
