- 1 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1/2 cup all-purpose flour
- 8 oz cream cheese, softened
- 1/4 cup granulated sugar
- 1/4 cup sour cream
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a medium bowl, mix melted butter and cocoa powder until smooth.
- Stir in sugar and eggs until well combined.
- Gently fold in flour until just mixed.
- Spoon about a tablespoon of brownie batter into each muffin liner. Bake for 10-12 minutes or until slightly set but still gooey.
- In another bowl, beat softened cream cheese and sugar together until smooth.
- Mix in sour cream and vanilla extract until creamy.
- Remove brownie base from the oven and add about two tablespoons of cheesecake mixture over each brownie layer.
- Smooth out the cheesecake layer and return to the oven for an additional 15-18 minutes, or until set around the edges but still soft in the center.
