Ingredients

  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1/4 cup sour cream
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a medium bowl, mix melted butter and cocoa powder until smooth.
  3. Stir in sugar and eggs until well combined.
  4. Gently fold in flour until just mixed.
  5. Spoon about a tablespoon of brownie batter into each muffin liner. Bake for 10-12 minutes or until slightly set but still gooey.
  6. In another bowl, beat softened cream cheese and sugar together until smooth.
  7. Mix in sour cream and vanilla extract until creamy.
  8. Remove brownie base from the oven and add about two tablespoons of cheesecake mixture over each brownie layer.
  9. Smooth out the cheesecake layer and return to the oven for an additional 15-18 minutes, or until set around the edges but still soft in the center.
