Ingredients

  • 2 ripe avocados
  • 1 cup fresh basil leaves
  • 2 tbsp freshly squeezed lemon juice
  • 2 garlic cloves
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Boil the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve about 1 cup of pasta water before draining.
  2. Prepare the Sauce: While the pasta cooks, scoop out the ripe avocados into a blender or food processor. Add fresh basil, garlic cloves, lemon juice, olive oil, salt, and pepper.
  3. Blend Until Smooth: Blend all ingredients until silky smooth. If the sauce is too thick, gradually add reserved pasta water until you reach your desired consistency.
  4. Combine Pasta and Sauce: Return hot drained pasta to its pot. Pour the creamy avocado sauce over it and toss well to coat each noodle.
