Instructions
- Gather your tools: medium mixing bowl, spatula, and a baking sheet lined with parchment paper.
- In the mixing bowl, combine rolled oats, dried cranberries, chopped pistachios, chia seeds, nut butter, and honey (or maple syrup). Stir until well combined; the mixture should be sticky yet manageable.
- Scoop out small portions of the mixture and roll them into bite-sized balls, about one inch in diameter.
- Place each energy bite on the parchment-lined baking sheet and refrigerate for about 30 minutes to firm up.
- Once chilled, transfer the energy bites to an airtight container. They can be stored in the fridge for up to two weeks.
