  • 1/2 cup nut butter (almond or peanut)
  • 2 tbsp chia seeds

Instructions

  1. Gather your tools: medium mixing bowl, spatula, and a baking sheet lined with parchment paper.
  2. In the mixing bowl, combine rolled oats, dried cranberries, chopped pistachios, chia seeds, nut butter, and honey (or maple syrup). Stir until well combined; the mixture should be sticky yet manageable.
  3. Scoop out small portions of the mixture and roll them into bite-sized balls, about one inch in diameter.
  4. Place each energy bite on the parchment-lined baking sheet and refrigerate for about 30 minutes to firm up.
