- 1/2 cup breadcrumbs
- 2 large eggs
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
- 2 medium carrots, chopped
- 2 stalks celery, chopped
- 1 can (14.5 oz) diced tomatoes
- 6 cups low-sodium chicken broth
Instructions
- Prepare the Meatballs: In a large bowl, mix ground beef, breadcrumbs, eggs, parsley, salt, and pepper until just combined. Roll into small balls about an inch wide.
- Brown the Meatballs: Heat oil in a large pot over medium heat. Cook meatballs in batches until golden brown on all sides. Remove from pot and set aside.
