- 1 cup sweet corn (fresh or frozen)
- 1 cup cornmeal
- 1 cup milk (whole or buttermilk)
- 2 large eggs
- 2 tbsp sugar
- 1 cup shredded cheddar cheese
Instructions
- 1. Preheat oven to 400°F (200°C) and grease a baking dish with nonstick cooking spray.
- 2. In a large skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
- 3. Stir in kidney beans, diced tomatoes, chili powder, and sweet corn. Let simmer while you prepare the cornbread topping.
- 4. In a mixing bowl, whisk together cornmeal, milk, eggs, and sugar until smooth.
- 5. Spread the chili mixture evenly in the greased baking dish.
