Ingredients

  • 4 cups vegetable broth
  • 1 tsp dried thyme (or 1 tbsp fresh thyme)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Sauté the Aromatics: In a large pot over medium heat, drizzle olive oil. Add chopped onion, minced garlic, diced carrots, and celery. Sauté until fragrant, about five minutes.
  2. Add Lentils: Stir in the rinsed lentils and mix well with the sautéed vegetables.
  3. Pour in Broth: Add vegetable broth along with salt and pepper. Bring to a gentle boil, then reduce heat to simmer for about 25-30 minutes until lentils are tender.
  4. Season with Thyme: Once lentils are ready, sprinkle in thyme and stir well to combine.
  5. Blend (Optional): For creaminess, use an immersion blender to blend part of the soup directly in the pot or carefully transfer half to a blender.
  6. Serve it Up: Ladle into bowls and garnish with fresh herbs or a drizzle of olive oil if desired.
