- 2 cups fresh celery, chopped
- 1 cup carrots, diced
- 1 medium onion, chopped
- 3 garlic cloves, minced
- 4 cups vegetable broth
- 1 tsp dried thyme (or 1 tbsp fresh thyme)
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Sauté the Aromatics: In a large pot over medium heat, drizzle olive oil. Add chopped onion, minced garlic, diced carrots, and celery. Sauté until fragrant, about five minutes.
- Add Lentils: Stir in the rinsed lentils and mix well with the sautéed vegetables.
- Pour in Broth: Add vegetable broth along with salt and pepper. Bring to a gentle boil, then reduce heat to simmer for about 25-30 minutes until lentils are tender.
- Season with Thyme: Once lentils are ready, sprinkle in thyme and stir well to combine.
- Blend (Optional): For creaminess, use an immersion blender to blend part of the soup directly in the pot or carefully transfer half to a blender.
- Serve it Up: Ladle into bowls and garnish with fresh herbs or a drizzle of olive oil if desired.
