  • 2 large onions, thinly sliced
  • 4 cloves garlic, minced
  • 1/2 cup brown sugar
  • 1/2 cup soy sauce (low-sodium preferred)
  • 1 tablespoon smoked paprika
  • 1 pinch cayenne pepper

Instructions

  1. Heat a large skillet over medium-high heat. Season the chuck roast with salt and pepper. Sear on all sides until golden brown to lock in flavors.
  2. In the same skillet, sauté sliced onions until translucent and caramelized, about five minutes. Add minced garlic and cook until fragrant.
  3. In a mixing bowl, whisk together brown sugar, soy sauce, smoked paprika, and cayenne pepper until well combined.
  4. Place the seared beef in a slow cooker or Dutch oven. Pour the sauce mixture over it along with sautéed onions and garlic.
  5. Cover and cook on low for about eight hours in a slow cooker or three hours at 300°F (150°C) in an oven until tender.
  6. Remove the beef from the pot after cooking and let it rest for ten minutes before shredding with two forks. Mix everything back together in the pot for maximum flavor integration.
